Great Grandma Adam's Vermont Homestyle Apple Butter Recipe

Apple Butter Recipe

  • Prep time: 40 minutes - 1 hour
  • cook time:  8 hours
  • canning time:  30 minutes - 1 hour. 
  • yield approximately 4 pints

things you need:

  • large pot 
  • slow cooker
  • measuring cups & measuring spoons, spatula wooden spoon. Butter knife
  • cider
  • around 4 1/2 lbs apples  use Sauce apples such as Cortland, Figi, -Rome best ,granny smith, McIntosh, Breaburn 
  • 3 cups of apple cider or juice
  • food mill & bowl to go under the mill
  • 2 cups sugar 
  • 1 1/2 tsp cinnamon 
  • 1/2 tsp ground clove
  • 1/2 tsp ground all spice 
  • Mason Jars 6-8 half pint jars
  • tongs



DIRECTIONS (Steps)

1)  Gather you apples and wash the apples.
       -I use a fruit and veggie spray like Honest Brand all natural to clean my produce.
       -Also I prefer Cortland apples.
             •But each apple creates a different taste. Play around with different types of apples in different batches for taste testing.

2) Place 3 cups apple cider or juice add to pot
     -I prefer a spiced cider like from a local source since I'm in New England
          •however Trader Joe's makes a great spiced cider in a pinch

3) Core & Quarter cleaned apples and place in large pot with the 3 cups apple cider
     -I prefer a spiced cider for a richer flavor and if you use apple juice I prefer all natural juice.
          •Do not use juice from concentrate, it alters the taste.

4)  -cover the apples and cider in the pot
     -Place on medium heat bring to boil and lower heat to simmer.

Cook until all apples get mushy and break down/apart while stirring occasionally with the wooden spoon. Turn off heat and proceed


5) Now all the apples are mushed& cooked.     -Run the apple mush and skins on stove top through a food mill at the finest grate into a collection bowl.
        •I use a medium mixing bowl under my food mill
        •Note: you do not need to remove the skins. The food mill will separate the skins from the cooked apple.

7) run all the apple mush through the food mill
     -use spatula on the inside of bowl and bottom of grate on food mill to get everything
    -remove food mill and set aside in sink to clean

8) Transfer the contents of the collection bowl into a slow cooker

9) add spices to apples in slow cooker
    •Add 2 cups of sugar
    •1.5 tsp. Ground cinnamon
    •1/2 tsp. Ground clove
    •1/2 tsp. Ground allspice
            ~I add a dash of a secret ingredient but mums the word on my great granny's SECRET spice addition

10) stirred until sugar and spices are completely dissolved and mixed in


11) Simmer for 8-10 hours
   -until the texture is thick enough to gather on the wooden.
    -note: Stove top can actually reduce time sometimes but it doesn't have as rich a flavor or deep color like when in slow cooker.
       •If you choose to cook stove top Add back into large pot and spice according to above

12) During the 8 + hours of cooking Sterilize 7-8 half pint Ball jars & lids in hot water stove top
  - and keep one small clean Tupperware out for extra.
    -Use tongs. Magnetic top grabber to remove jars and lids place on clean towel to dry.

13) now that once texture is reached after 8-10 hours you can prepare canning process.
      -If and only if you're having trouble thickening the apple butter take a small amount of water and dissolve a dash corn starch into the water. Mix into slow cooker/pot to slowly thicken. Only use after 7.5/8 hours in slow cooker. I prefer to cook longer but  the trick can come in handy)

14) prep for canning by getting canning pot prepared and preheated
   -I use lobster pot & add a rack, but the real canning pots have racks which are very useful
  -fill canning pot with enough water to reach one inch under the lid of jar.
   •You do not cover jars with water when still adding more jars to can


15) To can fill jars until .25 inch  (1/4 inch) space remains at the stop add lid place in large pot with water preheating.

16) Once all jars are filled and in the large canning pot you can Add more water to an inch above the top of the mason jars.
   - Bring to a boil.
         •Then reduce slight and keep at slight boil for 15 -18 minutes to properly can.

17) Use canning tongs to remove jars, be careful removing from boiling hot water.          - place on either a towel or a rack (I prefer towel) you will hear the BALL jars pop sealed when you remove them.
     - leave out to cool completely undisturbed.
         •Do not cool in the refrigerator.

18) after cooled completely  Use a permanent marker to write date of canning in the jar.

19) Add fabric rubber band then a bow to dress up as gifts

I love having mine with zucchini bread and remember to save anything that can't be can't into a small Tupperware container so you can enjoy right away

4 official starts to summer & Bad driving tourists

There are multiple days on Cape Cod that we use to celebrate the beginning of summer. First the locals get excited about the first super warm spring beach day of the year. Everyone gets a sunburn, because  we're all convinced that that burn still turns into a great tan. (& when does that really happen?!?) Of course that day is just locals and of course it's not a day we can predict and it's never that same time every year, but it's that first time you lay out feel sand between your toes and soak all the vitamin D from the sun straight into your skin. I've noticed the past few years its been on a weekday so pray you don't work a regular M-F 9-5 job.

 Next comes Memorial Day the first weekend of summer. This F-M culmination of which is Memorial Day itself has become synonymous with "BBQ" & "traffic" As a local in a tourist destination you notice the sudden influx of drivers that are from "off-cape" or "over the bridge" They are not all tourists, some do own seasonal property,  we affectionately call these quasi residents "summer folk" Some families come to the Cape to the same family owned houses for generations. Locals know them and are glad to see their repeat customer faces at their boat yards, stores, restaurant/drinking establishments, art galleries/theatres & glorious beaches. But this one weekend of population influx does not mean the season has started. We're open for summer but still waiting for the massive crowds. Memorial Day Weekend's also the day everyone dusts off their grills from last year, fills the propane tank or picks up the charcoal. Families gather with children, grandparents and friends. It feels like summer but the oceans still cold.  This is also prime time, if you haven't done so already as a local, hit up your favorite bar/night spot and get your Summer pass, which usually entitles the holder to admittance to the bar without a cover charge. Top bars like the Beachcomber in Wellfleet, Embargo or Trader Ed's in Hyannis par take in this tradition.

Summer solstice on June 21 is the longest day of the year,  the calendars denoted first official day of summer as denoted by science. People actually make a big deal of this on Cape Cod especially when its on the weekend and all the summer folks and tourists are in from off Cape.  Bars have special promos. and everyone tweets, instagram and Facebook's their beach time or other adventures whether it's getting seafood,  on a boat or watching the sun rise/set. There are a few weeks between memorial day weekend and summer solstice during which time city people, vacationers and summer folk can't do full week vacations yet because the kiddos are still in school. Around or before summer solstice school gets out for summer and the summer folk come down full time,  camps and sailing tennis and golf lessons also begin. Summer is starting to come around.


The 4th and last official start of summer on Cape Cod is nothing less than The 4th of July itself. This National holiday,  accompanied by BBQ and fireworks and family time is when summer is in full swing, hotels are full & waits are long at the restaurants. The cash cows of our tourist based economy are here & lots of them come here to vacation,  and relax, so much so that the population nearly quadruples on our islands and peninsula.  This is also when I know I'm starting to gear up into road rage mode with tourists. By then my most offensive traffic issues with tourists have happened multiple times.

There's the "I'm going to stop in the middle of the rotary driver that waves in big trucks" without realizing that no-one should ever stop in a rotary because every car behind you could come crashing into you.

 Then you have the "super tortoise slow driver" this drive could potentially be elderly, but even lost soccer mom's on vacation are guilty of this when driving kids and using GPS at the same time.

 The "lane changer" is the next top offense. Now you could do this anywhere and have this be an issue because these tourists do it when their not suppose to. My last favor lane changer does so during a left turn, how does one change lanes while turning?  If you asked yourself that you are possibly a fairly decent driver. As no one should change lanes while turning, by doing that when your in the left lane and the center lane is also turning left (or also going straight like when getting off at  exit 6 route 6 going west.) already 4 times this summer a tourist has tried to turn into my car from the left lane. They don't see care or realize the lane next to them is turning they just turn and switch lanes right into you.

Then you have the "ignorant stopper" this person stops when merging on the highway, I think they are allergic reaction to merging because more times than I'd like to count I've had to go to left to get around these crazy stoppers before the car behind me merges into my vehicle.  The other ignorant stoppers are those tourists that believe stop signs are optional or unable to comprehend how a four way stop works and they go immediately after the car in front of them with out giving the other 3 sides of the four way stop a chance to go.

 with so many ways to celebrate the various starts of summer its sad that only Labor Day Mark's the end of summer.  We've only had the first 3 starts of summer so far this year and the 4th of July is still a ways away. And Labor Day is even farther. I'm glad summers here although when dealing with the poor driving skills of the tourists I wish to tell them to navigate and drive smarter and faster because "I'm not on your vacation, you'er invading my hometown." welcome to Cape Cod ♡

Making a Seashell Picture Frame

Hello out there!!
    I hope you are enjoying the end of April and these April Showers. I cant wait for those May flowers to start springing up!!! So in search of bright colors of spring flowers, I chose to use some bright nautical materials I had laying around the house to make Tye dyed Seashells Picture Frames!!!
    I have a shoe box full of shells that a friend had left over from her own crafting. I didn't dye them either, my friend did, she used Rit Dye, available in various colors at crafting locations large and small such as JoAnne Fabrics.
    Be sure to wear latex gloves when dyeing the shells or else your hands will become a rainbow themselves. :-)
  • What you need:
    • Rit Dye, in various colors
    • Water, very hot 140 degrees
    • A container to soak shells in (Glass Jars work well)
    • Latex gloves
    • Paper towels 
    • Picture Frame
    • Glue Gun
    • Extra Glue sticks for Glue gun.
    • Newspaper/old magazine to cover workstation
  • Note: You can set up multiple containers at one for each color to quicken the process.
  • Please Note: Water will need to be hot, approximately 140 degrees, be very careful, Please Adults only with this HOT HOT Water.
  • Preparation: Be sure containers are thoroughly clean
  • Preparation: Be sure to cover all work stations with Old Newspapers to prevent dye from getting on your table.
  • Steps to dyeing
    • Add Rit Dye and Water to container
      • Use 1 tablespoon Rit dye for every 1 cup of hot water
      • Leave room in container for water displacement from shells
      • Stir Well
      • Do this in each container for each color you us
    • Immerse shells in water and let sit for 30-60 minutes and you will have a nice color
      • Note: the longer the shells sit in the dye the brighter the color
      • I know the shells I used were soaked over night in the Rit Dye.
      • Color to your liking, light or Bright
      • Dyeing your seashells is most similar to dyeing your  Easter Eggs
    • Once you remove the shells form the dye solution, rinse shells until water runs clear.
    • Place shells on paper towels and allow them to dry completely before use
    • Hint: shells dye best if they are cleaned thoroughly before the dyeing process
Now that your shells are dry and dyed you can start making your frame:

  • What you need:
    • Dyed seashells (See Instructions above on how to dye sea shells) 
    • Picture Frame
    • Glue Gun
    • Extra Glue sticks for Glue gun.
    • Newspaper/old magazine to cover workstation
  • Preparation: Be sure to cover all work stations with Old Newspapers glue from getting on your table
  •  Prepare Picture Frame for crafting
    •  Remove backing and Glass. Set aside
  • Plug in Glue Gun to heat up
    • Place extra glue sticks near by for easy access
  • Place shells along the frame to get an idea of how many you'll need and the positions in which you want to glue the seashells
    • I usually like to have two frames, one to glue one and one to do a mock up of my shells
  • Gluing on shells
    • I have found its best to place glue on the frame and on the seashell for durability
      • Glue only on the shell is much less sturdy
    • Adding first seashell
      • add glue to the location on the frame you which to place the shell
        • I like to start in a corner of the frame, but pick any area you like
      • add glue to the side of the shell that will be resting on the frame
      • Carefully place the shell on the prepared section of the frame
        • Note: Use of too much glue will make it easier to burn yourself. Be careful!
    • Repeat around the frame shell by shell until frame is covered by shells
    • Let frame sit on newspaper until glue is thoroughly dry
Now that your frame is all finished and dry its time to add a photo and place the glass & backing back into the frame that you had set aside early in the gluing process.


And TA DA you now have a beautiful homemade bright she shell frame.


Save any extra dyed shells for other crafting activities like making more house goods, jewelry making etc...
